Tangy Tomato Salsa

Combine 6 medium tomatoes, 1/2 red onion, 1 garlic clove , a drop of white wine vinegar, 1/2 a lime juiced and 1/2 a bunch of coriander. Blitz and then refrigerate until ready to serve.

Butternut Squash & Lentil Soup

Fry 2 onions with a pinch of salt for 7 mins, or until softened and just caramelised. Add 2 garlic cloves, 1/4 tsp chilli powder and 1 tbsp of ras el hanout, and cook for 1 min.Stir in 1 chopped squash and 100g lentils. Pour over 1L of vegetable stock and season to taste. Bring to the boil, reduce the heat to a simmer and cook, for 25 mins or until the squash is soft. Blitz the soup until smooth, then season to taste.Stir in coriander leaves and ladle the soup into bowls. Serve topped with natural yogurt and extra coriander.

Sticky BBQ Sauce

Heat 1 tbsp of oil in a saucepan and add 1 onion. Cook over a gentle heat 4-5 mins, until softened.Add 400g of chopped tomatoes, 3 garlic cloves, 85g brown sugar, 3 tbsp malt vinegar, 1 tbsp of tomato puree, 2tbsp of Worcestershire Sauce, season and mix.Bring to the boil, then reduce heat and simmer for 20-30 mins, until thickened. Whizz the mixture in the jug blender for a few seconds and pour over chicken wings or into a bowl to serve.
